Ingredients for 4:
1 tbs oil
1kg deboned pork loin
2 sticks cinnamon
2 star anise
125ml soy sauce
125ml yellow Chinese wine (Shaoxing)
55g brown sugar
5cl fresh ginger, minced
4 cloves garlic, cut in 4
1 onion, chopped
Preheat the oven to 170°C.
Heat the oil in a heavy pot, brown the meat on all sides. Remove from the pot, set aside.
In the same pot, mix the spices, soy sauce, yellow wine, sugar, ginger, garlic, onion and 1 cup water.
Add the meat to the pot, bake 2 hours, rotating the meat every 20 minutes.
Place the meat in a dish, cover with foil to keep warm.
Filter the cooking juices, thicken 5 minutes over medium heat.
Slice the meat, arrange in plates.
Serve drizzled with sauce.
Serve with: steam-cooked vegetables.
