Ingredients for 2:
300g garlic sprouts
3 eggs
2.5 tbs vegetable oil
1 tbs soy sauce
1 tsp yellow Chinese wine
3 slices ginger
salt and pepper

Garlic sprouts, or garlic flowers’ stems, have the same length as long beans and are crunchy with a light garlicky taste. This is a much loved vegetable in China. The most classic recipe is “Garlic fried pork”.
Remove the ends of the garlic sprouts. Cut them into 4-5cm sections.
Beat the eggs into an omelet.
Heat the oil in a wok over medium heat, ad the eggs, cook into an omelet, breaking it up into large pieces as you go. Remove from the wok, set aside.
Add 1/2 tbs oil, sautee the ginger slices. Once golden, remove from the wok. Add the garlic sprouts, soy sauce and 1 tbs cold water, sautee 2 minutes. Then, add the eggs, add the Shaoxing wine, mix together. Season with salt and pepper.

Serve with: vegetables, pasta, rice.
