Ingredients for 6 crepes:
2 untreated oranges
1 untreated pink grapefruit
½ tsp sugar
Clean the oranges and grapefruit under cold water, dry thoroughly. Zest 1/4 of an orange and 1/4 of the grapefruit.
Bring a small pot of water to a boil and blanch the zests briefly (30s). Transfer immediately to cold water.
Peel the oranges and grapefruit removing all whites, separate the wedges and keep any juice. Set aside and refrigerate wedges.
Pour the juice into a small pot, add ½ tsp sugar, allow to simmer and reduce by half over medium heat, stirring constantly. Allow this syrup to cool.
Arrange the fruit wedges on a plate, add the folded crepes, decorate with zest.
Just before serving, drizzle the crepes with syrup.
