Ingredients for 20 glazed onions :
20 pearl onions, delicately peeled
2 tbs butter
1 tbs sugar
1 pinch salt
Place the onions, in a single layer, in a saucepan with the butter. Add sugar and salt, pour water until they are almost covered but not quite. Cover at the onions’ surface with a sheet of parchment with a “chimney” poked into the middle.
After 10 minutes, remove the parchment and continue cooking until the liquid has turned into a syrup. The onions stay white and shiny, they are white-glazed.
Keep cooking, stir the onions in the caramel that’s taking shape. The onions start to color. Stop cooking, set aside. The onions are colored and shine, they are brown-glazed.
Do not allow to caramelize too long, or the onions will taste burnt.
