Irish cream (Baileys)Source :

Ingredients for 1000ml :
1 cup liquid cream
400ml sweetened condensed milk
1 2/3 cups Irish whiskey
3 tbs chocolate syrup (or quality dark chocolate)
1 tsp vanilla extract
1 tsp almond extract
1 tsp instant coffee granules

Chop the chocolate into smaller pieces, allow them to melt gently in a double boiler. Once the chocolate has completely melted, turn off the heat, but keep the double boiler. This phase very important, as it will determine whether or not the chocolate integrates seamlessly with the other ingredients. Add the condensed milk 1tbs at a time, stirring to mix well, until all the milk has been added.
Add the coffee granules, mix, and remove from the double boiler.
Add the cream and extracts, mix well. Add the whiskey, 1/3-2/3 cups at a time, tasting along the way until the drink has the desired strength.

Notes :
Tastes fantastic and is definitely much cheaper than Baileys.
I generally omit the coffee granules and almond extract because we never have any around.
The quantity of whiskey added depends on the spur of the moment, but is generally 1/3-2/3 cups below the indicated quantity.
