A little difficulty in determining how the final texture should be. Otherwise very very tasty.
Tasted after 4 weeks. This fruitcake is awesome. Brushed it with plain rum, may try vanilla rum or cointreau next time for a little bonus flavor.
Do not make this recipe in a metal cake pan. Or, if you do, remove from cake pan once baked and transfer to something else for storage and brushing. My metal pan seems to have reacted where the fruit touched its bottom. Another alternative would be to at least line the pan with parchment.
